In Zineps you add the HS code, value and country of origin per product. You use those details for all shipments of that product, without filling them in again each time.
Yes, for shipping outside the EU you need an EORI number. Digital customs documents only replace printing and sticking CN23 and invoices, not the EORI registration itself.
